Camping Season's Steak, Chips and Coleslaw is one for your next camping trip! Take a few simple ingredients and turn it into a complete meal full of mouth watering flavours!
Ingredients
Sirloin Steak (or the cut of your preference) x by the number of people eating.
Chips
6 Potatoes (Maris Pipers or equivalent)
1 Pod of salt
1 Pod of Black Pepper
Coleslaw
1 Cabbage
1 Carrot
1 Red Onion
1 Apple
Handful of raisins
1 tbsp Apple cider vinegar
1 Pod of paprika
1 tsp of Mustard
1 Pod of Chives
1-4 tomatoes
Tub of `crème fraîche (300ML)
4 tbsp of mayonnaise
Method
Pre-Step- If you have time salt brine your steak the day/night before. All you need to do it add a generous amount of salt to both sides and ends of your steak and leave it to rest on a rack in your refrigerator overnight. Don't forget to bring it with you!
Step 1- Grab your potatoes and cut them lengthways into slices; take each slice and cut into chips, try to keep them the same thickness for an even cook. Once you've cut all your chips put them in a bowl and cover with cold water for 1 hour.
Step 2- Take your cabbage and cut it into sheds, if then with a peeler remove the skin from your carrots and continue to peel them into the bowl with your cabbage. Next cut your onion into thin strips and add to the bow.
Remove the skin from your apple and deseed, cut the apple into little cube-like chunks and add to your bowl and then toss in your raisins. Add your tub of crème fraîche and your 4 tbsp of mayo to the bowl and stir to incorporate all the ingredients, if you need more sauce just add more mayo. finally add your pod of smoked paprika and pod of chives to the mix and give it a final stir!
Step 3- When this hour is up, drain your chips from the starchy water and pat dry with paper towel or a clean tea towel. Grab your cast iron skillet or pot and heat this before adding vegetable oil, once the oil is hot add your chips in batches, cook these for no more than 5 minutes. Every other time you remove a batch sprinkle the chips with a little salt and black pepper. Once you've cooked all the chips, start the process again to double fry, this will make them much crispier and flavoursome.
*If you have an oven pre heat it and then simply dry your drained chips, put them on a baking tray and lightly cover with salt, pepper, and some olive oil! and cook between 45 minutes to an hour at 180 degrees., tossing them frequently.
Step 4- As we suggested we recommend dry brining your steak the day before. If you're not doing this, then take your steak and pat it dry with paper towel, season with salt, black pepper, garlic powder, cook 3-4 minutes on either side for a medium cook and it rest for at least 5 minutes.
