Mexican Beef & Rice One Pot

Preparation Time: 5 mins.   Cooking time: 30 mins.    Serves: 4

A relatively healthy meal that's packed full of protein. Our Mexican inspired beef and rice one pot is quick and super tasty! Add some chopped avocado for some healthy fat and top with sour cream, coriander leaves and jalapeno. It's like our portable spice capsule was made for this!!

Ingredients

3 tsp extra virgin olive oil

1 red onion, halved, sliced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 garlic cloves, crushed

2 tsp OR 1 Pod smoked paprika (if you have a camping season portable spice capsule!)

2 tsp OR 1 pod dried oregano

1 tsp or 1/3 pod ground cumin

500g Beef mince

2 tbsp tomato paste

2 cup  beef stock

1 cup long grain rice

Sour cream with chives to serve

Chopped avocado, to serve

Fresh coriander sprigs, to serve

Sliced jalapeno to serve

Lime halves, to serve

 Method

Step 1: Heat 2 tsp extra virgin olive oil in large frying pan over medium-high heat. Add the red onion and peppers. Cook for 5 minutes, stirring occasionally.

Step 2: Add 2 garlic cloves, smoked paprika, oregano and cumin. Stir in and cook for 30 seconds or until fragrant.

Step 3: Add your beef mince. Cook for 6-8 minutes, breaking up mince with a  spoon until browned.

Step 4: Add tomato paste, beef stock and water. Bring to a simmer and then stir in your rice.

Step 5: Reduce heat to medium-low. Cook uncovered until liquid is absorbed.

Step 6: To serve top with sour cream, chopped avocado, fresh coriander sprigs, sliced jalapeno and your lime wedges.
