Lentil, Spinach and Okra Dhal

Prep time: 5 minutes      Difficulty: Easy      Serves: 4         Duration: 35 min 

One for the cold nights. Camping Season's Dhal is warming, fragrant and comforting. Great with rice, chapatis, or curried potatoes!

Ingredients

1 tbsp Olive Oil

1 brown or white onion diced

4 garlic cloves minced/ finely chopped

2 tbsp tomato puree

1 cup of red lentils

175g Okra- roughly chopped

100g baby spinach

3 tbsp of Camping Season Curry Spice Mix

Method

Step 1- Bring pan to high heat, add olive oil, and fry onion until translucent and starting to brown. 

Step 2- Add garlic, tomato purée, seasoning blend, and 1/2 cup water. Cook to form a paste and stir continuously.

Step 3- Once fragrant, add lentils, stir and let fry for 30 secs before adding 3 cups water.

Step 4- Bring to the boil, then let simmer for 25 mins. Stir occasionally. Add a little extra water if needed. 

Step 5- Add the okra and spinach - cook for a remaining 10 mins.

Step 6- Add salt and pepper to taste.

Garish with fresh coriander, and enjoy!!
