Kickoff your camping mornings with a burst of smoky goodness. Our Halloumi hash recipe is the perfect camping breakfast giving you a ton of energy for a day out hiking. Imagine crispy potatoes mingling with golden-browned halloumi. The textures provide an amazing mouth feel, once you’ve tried it you’ll be back for more!
Ingredients
2 tbsp vegetable oil
2-3 large potatoes
1 pack of halloumi 225g
1 white/brown onion
3 spring onions
Small handful of coriander leaves
2 eggs
Salt
Hot sauce (optional)
1 tbsp Camping Season’s Smoky Spice Rub
If you haven’t got our spice rub then include:
2 tsp smoked paprika
2 tsp oregano
1 tsp chilli flakes
2 tsp cumin
2 tsp black pepper
Method
Step 1: Dice your potatoes into 1-2 inch cubes. Leave the skin on.
Step 2: Heat a pot and add 1 tbsp of vegetable oil. Once hot add your diced potatoes and leave them to cook on a medium heat for 5 minutes. Do not stir them at this time.
Step 3: Once the 5 minutes is up, take 1 tbsp of Camping Season's Smoky Spice Rub and sprinkle over the diced potatoes and stir to incorporate the spices evenly. You will find the potato catches the bottom of the pan, this is where the flavour comes from so don't panic!! Scrape it off and stir it in. (If you are using your own spices add them at this stage.)
Step 4: Now add your diced onion, stir and again scrape the bottom of the pot. Leave this to cook for 10 minutes and stir again halfway.
Step 5: Once the 10 minutes are up, add a generous pinch of salt and stir. Cook until the potatoes are fork tender, add in your chopped halloumi, and cook for another 10 minutes - infrequently scrape the bottom of the pot and stir evenly.
Step 6: Whilst the hash is cooking, heat a pan, add a little vegetable oil and fry 2 eggs. Set them aside until plating.
Step 7: Finally add 3/4 your chopped spring onion into the hash and mix well. The potatoes should be tender with some turning into mash with crispy edges.
Step 8: Remove from the heat and plate. Top each plate with a fried egg, some spring onions, coriander leaves and a hot sauce of your choosing (we love Cholula for this one!)
