A fresh twist on outdoor dining. The crisp lettuce leaves cradle a slow cooked chilli, creating a handheld delight that balances heat and freshness. Get ready to assemble and savour these delicious and healthy tacos whilst you enjoy your camping break!
Ingredients
2 tsp vegetable oil
250g mince (beef or vegan alternative)
1 chilli diced (red or green)
1 white onion
3 garlic cloves chopped
1 red bell pepper
1 green bell pepper
Half a chorizo ring chopped (you can get a vegetarian alternative from squeaky bean)
150ml stock (beef or veggie)
400g chopped tomatoes
400g of pinto beans
1-2 little gem lettuce
2-3 squares of dark chocolate (70% cocoa +)
2 tbsp of Camping Season’s Smoky Spice Rub
If you haven’t got our spice rub you can include:
1 tbsp smoked paprika
1-2 tsp oregano
1-2 tsp dried chilli flakes
1-2 tsp cumin
1-2 tsp black pepper
Method
Step 1: Heat a pot and add 2 tsp of vegetable oil. Once hot add your diced onions, chillies and chopped chorizo. Leave them to cook on a high heat until the onion turns translucent.
Step 2: Now add your chopped bell peppers and minced garlic and cook for 5 minutes.
Step 3: Break apart your mince by hand and add to the pot, stir to remove clumps and cook until it is evenly browned. 5 minutes.
Step 4: Next add Camping Season’s Smoky Spice Rub (or your own spices). Stir well and leave to cook for 3 minutes.
Step 5: Add the can of chopped tomatoes along with your stock of choice. Bring this to the boil, then reduce the heat to low medium and leave to cook for 30 minutes. Stir infrequently.
Step 6: Break apart the dark chocolate and stir into the pot, you can taste at this point and add more spices if you want. Leave to cook for another 5 minutes.
Step 7: Drain the pinto beans and add them into the chilli, let it simmer for 10 minutes.
Step 8: Wash and separate your lettuce leaves. Spoon some chilli into your lettuce forming a green taco!
