Camping Season's Asparagus Orzo is another one for the lovers. Its dreamy, creamy with a tang of sun dried tomatoes. Its a sprinkle of heaven that pairs well with red or white wine!
Ingredients
1 cup of Orzo
Drizzle of olive oil (if you like)
2 cups of water
4 Asparagus chopped into bitesize pieces
Handful of sun dried tomatoes
1 pod of pine nuts
1 pod of red pepper flakes
1/4 pod of Black Pepper
Grated Parmesan
Method
Step 1- Snap off the woody ends of your asparagus and cut into bitesize pieces, chop up your sun-dried tomatoes into smaller chunks and grate your parmesan cheese.
Step 2- Boil 2 cups of water once boiling season the water some salt (pasta water should taste like the sea, so they say!) Add your orzo and stir into the boiling water and cook until it's a texture that you like. (if you have any spare water you can drain this off so its not too wet).
Step 3- Add the asparagus as the orzo is coming to the end to avoid overcooking. At this point also add your sun dried tomatoes.
Step 4- Take your pan off the heat and stir in your grated parmesan, red pepper flakes and pine nuts. You can also add a drizzle of olive oil at this point.
Serve with some extra grated parmesan and a bit of black pepper.
Job Done. Romance under 30 minutes!
