Brat Dogs

Camping Season's Brat Dogs pay homage to the annual German Market in Birmingham, UK and the Barbados Petrol Station Hot Dog. It's a combination of two classic recipes with our own touch. The pickle relish and parmesan is reminiscent of our time spent abroad and the bratwurst with a red sauce is something we have every year when returning to the second city. Simple and bloody good!   

Ingredients

4-6 Bratwurst Sausages

4-6 Hot Dog Buns 

2 Red Bell Peppers

Grated Parmesan

1 white onion (use 3/4 to fry or grill and the remainder for the pickle)

Pickle Relish

4 pickles

1/4 finely chopped onion

White sugar in ratio to vinegar = 2tsp  

1\4 cup of white wine vinegar

1 pod of mustard seeds

Red Sauce

Tomato Ketchup

1 pod of smoked paprika

1 pod of garlic powder

1/2 Pod of Black Pepper

Method

Step 1- Whip up your pickle relish, begin with dicing your pickles and your 1/4 onion, give these a good mix and leave to rest for a couple minutes. Bring your vinegar and sugar to the bowl and stir until the sugar has dissolved. Finally stir in your pod of mustard seeds and taste, add more sugar if required. That's it a simple but tasty relish.

Step 2-  Get another bowl and squirt a large dollop of tomato ketchup, get 1 pod of smoked paprika, 1 pod of garlic powder and 1/2 a pod of a sprinkle black pepper, mix it all together until it looks like ordinary ketchup with little bits of pepper showing. When the garlic powder is no longer visible its done!

Step 3- Heat your coals and when ready add to your barbecue, put down your grate and add your bratwurst sausages and red bell peppers. cook this for 10 minutes turns frequently for an even cook. (When your red pepper is done to your liking, cut them up into bitesize pieces)

Step 4- Whilst the sausages and peppers cook, grate some parmesan cheese and butter your buns.

Final Step- Now its time to assemble! Open your bun put a layer of red sauce, pickle relish and grated parmesan into your bun, next add your sausage and then top again with relish and parmesan and some red pepper. Enjoy!!
