Tomato sauce is a main staple for so many camping meals, Pizza, Pasta, Shakshuka, Parm the list goes on and on! We like to make our own as we can skip out all the unnecessary ingredients making it healthier and its way more efficient than the store bought options. Make it the night before you head off and you'll make cooking so much easier when you're out camping!
Ingredients
Olive Oil
5 400g cans of plum tomatoes
4 cloves of garlic
2 tbsp of Oregano
1tsp salt
5 torn basil leaves
Method
Step1- Grab a large pot and put it on a medium flame, when hot add a generous amount of Olive oil. Once the olive oil has warmed, add your five cans of plum tomato to the pot, take a potato masher and crush the whole pieces of tomato until it becomes liquid. Stir and add your garlic cloves, oregano and salt. Let the sauce reach boiling point, stir and reduce the heat to a low flame and cover. Stir every 10 minutes and cook for 90 minutes in total.
Step 2- Once the time is up, remove from the hob and add your torn basil leaves stirring into the sauce whilst its hot, you don't need to cook the basil leaves as they will lose their flavour if they are put in to early.
Step 3- Take a mason jar or container and add a little Olive oil at the bottom. Once your sauce has cooled down add it to the mason jar and close, you can leave this in a dark cupboard overnight but remember to take it with you!
