Campfire Steak Noodles

A quick recipe that comes together in under 30 minutes but doesn’t skimp on flavour! Picture succulent strips of steak nestled in a savoury broth, accompanied with hearty egg noodles. This easy-to-prep camping meal promises a fusion of robust flavours. Sure to become an outdoor favourite!

Ingredients

Chopped ginger (around a ½ thumb size)

2 diced garlic cloves

Egg noodles (1-2 wheels)

Large handful of dried porcini mushrooms

1 pak/ bok choy

Miso paste + 500ml boiling water

2 boiled eggs 

1 steak (we used a fillet steak but this is open to choice)

1 red chilli

2 spring onions

2 tsp Camping Season’s Lunar Spice Mix

2 tsp sesame oil

2 tsp fish sauce

Sesame seeds (optional)

Soya sauce to taste

If you haven’t got our spice mix include:

1 tsp ground sichuan pepper

1-2 tsp ground star anise

1-2 tsp dried chilli flakes

1-2 tsp ground cinnamon

Method

1. Bring water to the boil, add your eggs and cook (5-6 minutes for soft boiled eggs). Set them aside to peel later.

2. Grab a bowl/ large cup and add 2 tsp of miso paste to approx 500 ml water and set aside. (Alternatively you can add the miso paste and water at step 5, we just prefer to let it sit for a while to marinate.) 

3. Dry your pot and add 2 tsp of sesame oil. When the oil is hot, cook your steak for 4-5 minutes on each side or longer if you like it well done. Once the steak is cooked to your liking, set aside.

4. Now add the diced garlic and ginger to the pot and let it cook in the oil until fragrant. (You can use store bought minced versions to save time, but the real thing tastes much better and takes up less space in the backpack!) If you are using fresh ginger use the back of a spoon to peel the skin!

5. The next step is to add the porcini mushrooms and bok choy and cook for 2 minutes before adding your miso broth, fish sauce and 2 tsp of our Camping Season’s Lunar Spice Mix or the ground spices. Turn down the heat to let it gently simmer.

6. By now your ingredients should have married well within the broth, add your eggs noodles to the pot and cook for 5-10 minutes. Once the noodles are cooked to your liking turn off the heat and add a touch of soy sauce and stir.

7. Peel your eggs as they should now be cool and cut into halves.

8. Slice your steak into strips and add it to your broth along with your egg halves. Chop red chilli and spring onion to scatter over the dish. Top with sesame seeds if you wish.
